Kappacasein
I'm somewhat notorious among friends for my love of cheese and bacon so I'm a man who appreciates a good cheese toastie (or grilled cheese sandwich). Kappacasein in Borough Market, London does some truly gorgeous cheese toasties and I've been visiting them for a few years now.
For a while, they opened up their small dairy near Maltby St Market (according to the website it's still open for a few hours on Saturdays) which is way harder to find but a nice little location tucked into an arch under a railway line. After a wander around Maltby St Market, sitting down for a great grilled cheese sandwich in the sun was very welcome and I took a couple of photos of the staff at work creating these tasty beasts.
I don't know this guy's name, but I assume he's one of the key staff as he was on the stall at Borough for quite a while before seemingly moving over to the dairy. Whenever I got a sandwich from him, you could tell care had gone into its making and it shows in the taste. I also love the confidence in their produce: they list all the ingredients on the boards so you can copy their recipe (which I have done a few times). £5 for a cheese sandwich seems pricey but with their own cheese and great bread you can really notice the difference.
